Imbul Kiribath

Kiribath Ingredients:

Washed Fortune Basmati rice 250 g

Water 1 1/2 cups

Thick coconut milk 2 cups

Salt 1 tsp

Panipol Ingredients:

Scraped coconut 2 cups

Coconut treacle 1/2 cup

Sugar 1/2 cup

Salt 1/2 tsp

Method

Kiribath

Wash the Fortune Basmati rice thoroughly until the water runs clear. Drain the rice and add it to a pot over heat along with water and salt. Cover with a lid and let the rice cook. Once the rice is cooked, stir in thick coconut milk. Gently fold the coconut milk into the rice until well combined. Let the mixture simmer for a few more minutes on low heat.

Panipol

Add coconut treacle, salt, sugar and scraped coconut into a pan. Cook for 10-15 minutes on a very low flame until it caramelises and becomes a nice brown colour.

Make the imbul kiribath

Spread the kiribath on a plastic sheet, add panipol in the middle and tightly twist to get the iconic imbul kiribath shape. Serve hot and enjoy!
